The Art of … Turkeys

November is here and it's time to talk turkey.

The bird we've come to recognize as a "Thanksgiving" turkey
is classified as a heritage turkey, and could be any one of 8 breeds.

Now, the birds we buy at the supermarket for our big feasts are most likely 
a breed called the broad breasted white turkey,
known to accommodate people's preferences for lots of white meat.
My family, however, always lunges for the juicy, dark thighs.
